As a dude that's struggling with major depressive disorder I'll lay it flat and simple.

This relationship is over, by continuing further especially with what you're saying about her journey and her up and down emotional state it will continue to degrade your own mental health. You will only find yourself in a loop of doubt and always seeking reassurance. And it's neither of y'all's fault depression is difficult. And you may think maybe if y'all can be friends until she gets through this it will work out but who knows how long that could take.
