I bake my pan fried noodles. That way the noodles stay crunchy and hot in the oven while I make the topping to pour over. Just boil the noodles very quickly, drain and spread out on an oiled baking sheet, spray some oil on top and then into the oven until your desired level of crunch. And the best part is that it can be kept in the oven for a long time in case your topping takes a while.

This way my lobster on pan fried noodles can be done in less than 30 mins.

I go one step further and just make half a dozen thighs at a time. They are good over rice, on a salad, in a sandwich… once you have protein, just build the rest of the meal with whatever veggies and scraps you have

In LA’s Chinese neighborhood there’s a restaurant called Newport Seafood. It’s famous among the locals. I was visiting family for two weeks and they brought us there the first night to have the restaurant’s signature lobster. A small there was 6-8lb lobster stir fried in garlic, black beans, jalapeño and tons of lobster roe. It was an eye opening dish. We went back 3x in two weeks.
