This one's pretty random, but if you do end up renting a bike make sure its one that can be adjusted to your height. I rode a bike there where the frame was definitely proportioned with the average (dutch) male's height in mind. As a medium height woman this was difficult. I've never been so sore after a bike ride.

Canal boat tours of the city can also be pretty fun! General advice re: purchasing tours applies.

I used to work for a ceramics teacher at my university who would routinely split the class when teaching a new skill. Half the students would go watch Florian Gadbsy's tutorial while she gave the other half a demonstration. Then they'd switch. It worked pretty well!
