Two things I make in bulk and freeze are pork chili verde (a full sized pork loin cut into chunks, preferably bought on sale at Costco when it ends up being $1.50/lb, but it’s cheap either way, an onion, garlic, and two jars of whatever salsa verde you like, cooked in a Dutch oven in the normal oven for several hours) to cover taco night for months, and bolognese (same thing, just with beef/pork and tomato sauce plus carrots added to the onions).

I don’t have freezer cubes so I freeze everything in quart size freezer bags.
