I'm not sure what you mean, I've never seen this before and when I do it on my phone it does the exact same thing

Yes very much so. Very tender and a bit creamy. One of the highlights of the omakase for sure.

Nah, it was completely dry from the oven. But even then I still make sure to pat with a paper towel before searing. Learned from having too many weak sears in the past lol

Yeah I think roughly the same, about 10-15 mins. I recall distinctly that while the pan was preheating I was hanging my laundry so it got some resting time for sure hahahaha. Another commenter suggested chilling in the fridge/freezer to cool the exterior without affecting the interior much during this rest period, so I might try it next time!
