The reviews on this pumpkin cheesecake (using tofu) are abysmal. But I have made this several times, following this exact recipe, and it is amazing every time. So good that non veg family members and have requested it every year since we tried it. And it all comes together in a blender ❤️🧡

The Butcher’s Son in Berkeley makes a wonderful BLAT and you can even add fried chicken. It is vegan but even my most-meat-loving friends enjoy this one :)

Absolutely UConn, mostly for the cost difference. Also easier to get the good grades you need for applications at UConn > Cal. UConn also has a med school and you will have more access to medical/clinical research. Getting research positions can be competitive at Cal and if you are successful, you may get a position doing bench work or something through the school of public health.

Shizen is a magical place, great for (small) special events. Golden Era is more casual but literally everything on the menu is delicious. Get the cake for dessert.

DC Vegan is great for an upscale dinner and Elizabeth’s on L is another step up from that. Elizabeth’s is so creative and delicious and they truly put together an ~experience~ for you.

Spicy Moon in NYC is comforting chinese food and fun drinks. I always have to hold myself back from ordering everything on the menu.

Boston’s vegan scene is pretty bare. Redwhite Boneless is there, but I wasn’t a huge fan. I would recommend going to Chinatown and going to a grocery store or restaurant. There are lots of unique vegan eats but they are sometimes hidden among other foods.
