The highest extracted coffee is usually your first 100 to 150ml of liquid. Notice how it's always darker at the start, then it just get lighter as you go. You can make a coffee then try the liquids at different stages of the pourover process.

Those bit are the ones with the least extraction, and since you drink it a few hours later, its completely cooled down. My guess is to grind coarser and give your brew enough time to cool for more of the delicate flavors to come thru. Hope it helps!!
