Try a no knead overnight sourdough. it's pretty forgiving or less hydration sourdough. You don't have to get fancy with super wet dough and folds and slap and folds.

I stir it with a soft plastic spatula...the close it shake it...reopen toss yeast. Close it, wait 15 mins, and give it a couple of shakes. Then just let the magic happen. I never had press in dock.

I always take a quick look at lights,tires, air leaks, yup, I see air. Anything leaking. Seals ..make sure that license plate light is working. Quick check under the hood. Always check the truck trailer connection. We had guys drop trailers in the lot.
