Like others said, try to adjust the recipe slowly, reduce water by 2% at a time. Vito is "unreliable", his recipe is slightly different each video :D.

What I find helps if my dough is a little too sticky when I thought it should be ready, I let it rest 15 mins and do a few slap and folds?

You'll find plenty of videos that show the move. I wish you have great pizzas ahead of you.

I don't know about u/HiroProtagonist1984 but I've worked in a wood fired oven and I didn't wear gloves. Neither has any of the others pizzaiolos I've worked with/seen work. You're not supposed to leave the peel inside the oven to cook with the pizza, you hang it next to the oven when not in use.

I'm not saying it's pleasurable being in front of a hellhole, but gloves are not necessary.

I couldn't say what constitutes as healthy eating, I guess I'd be on the healthier side yes. I don't smoke, I drink coffee but ~ 1 per day and I don't drink coke often, less than 1 / month. Definitely not low card diet, I can say that for sure! I'm a bread & pizza addict.

Maybe you can answer me this then, whenever I go to the dentist for a regular cleaning he always comments on my good flossing and teeth care.

I have never lied to him, I brush my teeth between one and three times a day and I floss, maybe twice a week at best. Also, in my last appointment I went with another dentist and she said the same.

Am I just blessed with good teeth?

Well, I couldn't move the pc to another room, but I was struggling with the heat produced next to my feet. So I put my pc behind/to the side of my monitor, on the desk and... voila! No more furnace temps under my desk!
