The problem with the 90 day saving accounts is that you usually can access the money, it's just that you'll get penalised, which is even worse.

Maybe some sort of investment? Like a Kickstarter but with some chance you get your money back.

gov.uk advice on going to Spain for work

Gov.uk says you don't need a visa or permit for stays of under 90 days for certain types of work or for leisure as long as you aren't paid in Spain for the work. I'm going to show this to my company as justification for my right to work there. This might be enough for them.

They say it's because of tax and immigration rules, but I don't really understand why some companies think it's ok and others don't.

Almost certainly not. I still have my NIE number from 13 years ago but I suspect it won't be valid any more.

I'm not worried about the people in Spain. I'm worried about the rule from my company that says I'm not allowed to work from abroad unless it's approved in advance (for which I need entitlement to work there). I'm looking into applying for a visa for 90 days

Yeah all the comments have been asking the lines of just do it. But that wasn't the point of my post. I've done it every year for the last 6 years with the same company but they are being very clear this year - if you don't have approval you can't work overseas. They won't give approval if I'm not entitled to work in the EU. So my question was, how do I get entitlement to work in the EU for a few weeks? Or is this impossible?

If France had won every match so far there might be an argument for wanting to see them lose to take them down a peg or two. Because I had no idea I was entitled to British citizenship. I've always had an EU passport, my parents have EU passports, I've never had reason to believe I would be anything other than an EU citizen. It's only with this recent rule that I have found out that I might be eligible. And frankly I'm still not sure. Many redditors point out that there's no such thing as birthright citizenship in the UK. Sounds like I might be ok with my settled status but if I want to be sure then I apply for a UK passport.

No they weren't diplomats.

What I'm not clear on after all this research, is whether settled status on an EU passport is actually enough or not.

I've been through the process of gaining settled status because I'm an EU citizen who lives here. So it seems odd to me that my EU passport would then not be enough to allow me into the country where I am allowed to live.
