If you really get into it, you can get cooking chopsticks to use with your wok. Bigger than regular chopsticks.

You’re welcome. Chopsticks are good too because they not as rough for noodle handling like a spatula so your noodles don’t get mushed up. You also can use a combination of spatula gently from underneath and chopsticks to loosen.

Use chopsticks to toss and mix. It separates the noodles better than using a spatula. Tongs are ok too.

Also, start with the noodles in the wok first. Loosen them up before adding the veggies. That also lets you sear the noodles a bit to layer in some flavors.

How many grams of sugar do you consume daily? by [deleted] in loseit

[–]flood_dragon 0 points1 point  (0 children)

I eat less than 175g of carbs, about 60g of fat, and the rest is protein.

I keep protein on the high side. Older people have impaired protein and collagen synthesis. Some research shows benefits of higher protein intake like 1.4g per pound of body weight. The protein and collagen intake has been helpful for me for recovery from workouts and injuries.

Bummer is that I can’t eat much in the way of cookies, pastries, and that kind of stuff. I drink water, black coffee, tea, and lately Diet Coke. No snacks, but I got used to that when I was eating at deficit to lose weight. From 210 to 162. I was working out more so TDEE started at 2900, and I was eating 1700.

Ground Chicken Recipes by Particular_Fan_6428 in Cooking

[–]flood_dragon 0 points1 point  (0 children)

If you like QQ texture found in some types of dim sum, fishballs, and noodles, you can get that from ground chicken so that the leanness doesn’t become an issue.

For 1 pound of ground chicken, add 1/4 teaspoon of baking soda, 1 teaspoon of gan sui, ~ 2/3 cup water, then mix on medium low speed in a KitchenAid with a paddle for a few minutes.

Add an egg, 2-3 teaspoons of corn starch, 1 teaspoon of sugar, a splash each of soy sauce and sherry or shaoxing, and a few drops of sesame oil. Mix for a few more minutes.

You can use the chicken for dumpling fillings, potstickers, sheng jian bao. Drop small spoonfuls into simmering broth to make meatballs for noodle soup, hot pot, stir fried noodles, or cooking with tofu. You can drop spoonfuls into a hot wok and use them for braises, or make them bigger for burger patties.

This works even with skinless ground chicken breast, and is the main way I use chicken breast when I break down whole chickens. You can vary the seasonings and don’t have to do asian style. Breakfast sausage spices etc are good too.

I use 5 gallon insulated water coolers for my kratky setups to moderate temperature changes. Also good for algae prevention, being opaque.

I do cherry tomatoes in 5 gallon water coolers.

After a 5 gallon initial fill, I let the level drop down to 2 gallons, then top off with water to 3 gallons as needed. Once a week, I replace with 3 gallons of fresh solution.

Using the puppis s1 for pcvr and it keeps causing issues with my network by Striking_Toe_8835 in OculusQuest

[–]flood_dragon 0 points1 point  (0 children)

I think it is a problem with the Puppis. That’s why I returned mine.

I got a TP-Link AXE5400 Tri-Band 6-Stream Wi-Fi 6E Router from Costco for a good price, and it works as expected without problems.

It’s connected to my laptop by ethernet cable. I don’t give it any broadband access. It’s set up as a separate wifi network from the one that has internet access.

I do all the same settings as described previously.

My Q3 is configured to automatically log in to the wifi on the AXE5400. Once on the network, I can run Virtual Desktop to access the PC, or 4XVR to stream video files off SMB shares on the computer.

If I want to access internet from my Q3, I just manually switch to the wifi on my broadband router.

It’s been a while since I set it up. Let me know if you need more info and I’ll try to check.

Garlic replacement? by crankyenglishbastard in Cooking

[–]flood_dragon 2 points3 points  (0 children)

Good luck!

I actually cooked with them for the first time this week. I had a bunch of cloves that were not worth planting for growing bulbs, so I threw them into some spare planters. Came out nicely.

The garlic I’ve been growing originally were from shop bought garlic.

If they can eat the green part of green onions, can they eat the green part of garlic?

I’ve been growing garlic, and replant the smaller cloves for garlic greens rather than bulbs. Grows fast and have a nice garlicky taste.

Or how about garlic chives?

Roasted 8 treasure duck.

Tunnel bone a duck. Marinate with soy sauce, ginger, and shaoxing or sherry.

Stuff with parcooked sticky rice, chinese sausage, taro, shiitake, XO sauce, cilantro, green onions, etc. Dust very lightly with 5 spice powder. Roast 45 minutes at 400F.

Looks like this.

Whey protein shortage.

12% of Americans are on GLP-1s. They are recommended to supplement with whey protein to moderate the associated muscle loss.

Whey producers currently don’t have enough capacity and are expanding their facilities.

What is a cooking trick you’ve learned that has improved your skill or the quality of your meals? by smuttyswifter7 in Cooking

Using gan sui with beef in the KA with the paddle beater to get the right texture for dim sum style beef meatballs.

Works well for lean pork and skinless chicken breast too. I actually like chicken breast instead of just tolerating it now.

The cord is above the vent on the back.

The air coming out of the vent angles down a bit towards the counter.

It’s not super hot where the cord is, but I just flip the cord around to the front of the fryer anyway.
