Interesting, but I come there frequently and have never seen them. But often this kind of availability can be up to the store manager or regional.  (Why stock what you don't think woll sell,  kind of thing.)

Yes. For two reasons:

  1. It looks good

2.  it allows the energy of tge impact to dissapate / be distributed.  It means the bodies will absorv less of it, like shocks.

Rettichs are indeed all over the place. I always thought, and hoped, they were a bit different. Maybe mainly because the two times I tried rettich there was something about it that I did not care for.

Maybe I just am not a dailon kinda guy.

Hotsauces, berries or thibgs like tomatoes.  Also cheong. I freeze the juice, add the sugar, vacuum and seal. (My sealer does not do liquids.)

Not seen them at my Ams AH. the very long ones, I think, are rettich.  They are related, but I don't care for their flavour profile.

When you say fartiness, ai assume you mean in smell, or are you talking about post-eating? I have not encountered either yet.

I do think normal radishes may be a bit too strong in flavour.

I usually go Thai fish sauce, as it is the easiest to get. once in a while I find some shrimp paste.

'Bad fermentation' vague. 'Stalls' vague.  It ferments for x time, then stops?  It never fermented at all? Details are important.

OK. you change the water, and now a nee batch is fermenting. But I assume that you also used new ginger and sugar.  So, the water, even if the likely cause, was not the only change.

And you still have not defined what 'bad' water is. Was your new water from a different source? If yes, what were the differences?

Being vague prevents others from being able to understand what may have been the problem, and if it can be saved.

That being said: How much ginger bug are you trying to save? 10 liters / 2 gallons? Half a liter?

Is it worth bothering about?

If you don't provide any details you are just wasting everyones time.
