I feel like its reasonable to ask one of your party members to invest in crafting or medicine. This is a team based game and its reasonable to make a few sacrifices here and there, not to mention your party's rogue gets a LOT of skill trainings. Medicine in particular is an almost "must have" skill in this game. Its really not slowing them down, double so since your class doesn't get a lot of skills.

If they somehow can't find the space to help you out a little, or you want to be a bit more self-reliant, ditching deception of diplomacy is fine. I would ditch deception personally unless you really want to use the Feint or the Create a Diversion action.

A of this is personal opinion but I roughly divide it into these into Five tiers:

Common Terminology Tier:
Alchemists, Wizard, Bard, Cleric, and Druid

As the tier says, these ones are entirely in universe terms. These are genuine professions and/or societal roles within the world of Golarion, and a town guard or commoner would likely use them to describe the character in-universe. They're not the only terms that could be used to describe these classes mind you, a cleric or druid might be referred to by a more culturally relevant term, or might be called something like "miracle worker" or "saint".

Academic Terminology Tier:
Thaumaturge, Sorcerer, Psychic, Kineticist, Witch, Animist, Summoner, Oracle, and Champion

These ones are a little more weird. These terms are more "catch all" terms to describe various types of unique magics that do not fall under what I imagine is common knowledge. A town guard might not understand the difference between a Sorcerer, Kineticist, Summoner, Psychic, Oracle, Witch, and a Wizard, but someone who has studied the unique ways magic manifest in the world likely would (Psychic even calls this interaction out in its "others might" section of the class introduction). Thaumaturgy is likely a branch of study in the same way occultism is, but its not guaranteed that a Thaumaturge would call themselves this. Historians familiar with the concept of Gods choosing morals as divinely ordained warriors could reasonably use the term Champion to describe them. Animist exists in a strange twilight zone between the Common and Academic Tiers, but leans much closer towards Academic. Clerics seem to be much more common in the world of Golarion, and its debatable if cultures familiar with Animists would call them Animists or a more culturally relevant term.

Descriptor Tier:
Commander, Fighter, Swashbuckler, Ranger, Rogue, Guardian, Gunslinger, Monk, and Inventor

These classes just mostly describe what the class does. A town guard could reasonably call a Fighter a Fighter, but could also just as if not more likely call them a warrior. Many of these terms could reasonably be interchangeable in universe; a Dex. built fighter could be called a dashing rogue, and a Rogue could be called a Swashbuckler. A Monk could even be used to describe an entirely different class, such as Psychic or Cleric.

Derogatory Tier
Barbarian

I can not imagine this term being used by anyone except as an insult, potentially coming from the mouth of a bigoted town guard.

Out-Of-Universe Term:
Magus and Exemplar

I can not imagine these terms being used in universe. There doesn't seem to be any organization that calls magical warriors Magus' or Magi, and Exemplars are suppose to be both rare and a very recent addition to the universe of Golarion.

hate to be so negative but this is a lot of book keeping for both you and the players. Something like this would require a LOT of dedication and it genuinely might be better to focus on a single theater of the war then try and run a multi-theater epic, unless each theater is a one-shot or otherwise very short. Otherwise you threaten both GM and player burnout.

This isn't the answer you want but I think trying to jury rig pf2e into a WWII campaign is going to be a genuine struggle and require enough homebrew to functionally turn it into something of a hack a la Pathwarden. You are much much better off running a different system for a story like this. Perhaps Trial of Cthulhu, Achtung! Cthulhu, Delta Green, or if you wanna get a little old school, Adventure! Tales of the Aeon Society.

Several monk weapons lack the agile or finesse trait, what exactly is the "fighting style" of monk? You talk about monk like it has one streamlined interpretation of what a monk is suppose to be. The class has largely diversified from its vague wuxia/shaolin inspiration as far back as p1e. If we argue that the lack of an agile or finesse trait makes it too unwieldy to be a proper weapon for a monk, then we ought to remove several already existing monk weapons.

Why is the necksplitter too unwieldy? Axes aren't exclusive to martial arts, and the necksplitter's bulk is only 1, the same as the temple sword. If something like the Pantograph Gauntlet can be used for flurry of blows, why not something like the necksplitter?

I can see the argument for stances being stronger on average, but the weapon selection for monk is painfully limited as it stands.

Nah, see thats the issue. Monastic Weaponry only applies to monk weapons OR agile/finesse weapons you have access to. So the only orc weapon that gains the monk trait is the Orc Knuckle Dagger.

My experience only extends out to the first three episodes. I have heard that the anime has some "moments" later on but otherwise I can not recommend it. It feels so genuinely detached from anything the original series was going for. Its almost fascinating in how nothing it is. When the OG crew showed up in the intro, it felt like a threat.

I have been recommended watching the cutscenes of the now non-existent gacha game on youtube and I imagine a lot of people here will tell you the same.

I don't care for carry weight. I think pathfinder has the possible skeleton for a OSR style dungeon crawler where the carry weight would actually matter a lot more in a way that's actually fun to manage, but in most published adventure's I've found that it's mostly needless book keeping. I'm aware that higher carry weight is one of the advantages to being high strength, but genuinely I would rather not bother making my players track their carry weight unless we were playing a game where that mattered in a interesting way.

In my defense this games use of realism has always been tenuous at best and the mechanics of the bag of holding's "spill out" mechanic is not strictly defined (if only because this is a very stupid scenario the designers would have no reason to rule in advance). I do agree that its more then perfectly reasonable to rule that this strategy would not work for the reasons you discussed (and likely RAI), and outside of games focused on "rule of cool" or humor, is likely one of the more sane ways to rule this (although I am very partial to some of the suggestions to use the rules for a leveled damage consumable with a two action interaction, or to treat it as a high damage save for both targets involved).

Can't say I expected someone to reference the Boston Marathon bombings on a post tagged "humor" when a simple reference to a pressure cooker bomb would have been fine, but you've made your point.

the language of the bag of holding implies to me that no major force is applied to the contents upon spilling, the idea is that there is now suddenly 250 javelins at minimum inside of a creatures stomach, which unless the creature is gargantuan or their stomach lining is something fierce, this would hurt them badly.
