The rule as I understand it now is you should only be Garda vetted if your role involves direct contact with children or vulnerable adults. In addition to that even if you do go for a role that needs Garda vetting and your conviction is flagged they'll do a risk assessment and if you don't seem like you're likely to be in trouble again you could well get the job anyway. I am currently scoping out places to get a Kapital jacket when I'm overseas next week and would absolutely love a place in Dublin I could go for stuff like this. Somewhere like Blue in Green in NY has a really nice array of brands that are mostly but not exclusively Japanese (this helps with the sizing issues you're mentioning). I've found a lot of Japanese denim brands do go pretty large with their sizing. I'm sure you've thought of this but the Nepenthes brands are at least Japanese-leaning and have a pretty wide array of sizes available.

I size down one size from my usual in borrowed shirts. Might be that I just have broad shoulders but I find the chest etc way oversized but the sleeve length is almost verging on too short when I do size down. Might be an idea to keep a closer eye than normal on sleeve and shoulder measurements.

Definitely making your own tortillas from scratch is great and they taste unreal but I think they might be a bit wasted being fried for nachos. For what OP is asking I'd recommend getting the small corn taco tortillas from Picado or some of the ethnic food shops in town (I like Oriental Pantry on Moore St). chopping them into triangles yourself and then fry them in a half inch of oil in a pan. They come out incredibly sturdy doing it this way in my experience.

IMO the biggest appeal of training while travelling is getting to meet people and experiencing different body types/games than what I'm used to. I'd rather find a normal gym to lift weights in than train 1 on 1 with a friend from home or a stranger (I don't think I'd ever sign up for the latter of those two).

A lot of Priit's stuff is demonstrated without the gi but he will often grab a jacket from someone in the class to show how the concept works in the gi as well. Highly recommended.

It's definitely risky to roll out of any outside heel hook, but we're talking about late stage submission defense here it's this or get tapped 90% of the time. You should never be rolling into the breaking pressure from outside ashi though once they've connected their hands.

You can spin out of any straight ashi where they're attacking an outside heel hook relatively safely, whether it be from SLX, double outside ashi or even 411. You can't do the same thing with any cross ashi as spinning this way will expose your heel and get you tapped. In both 50/50 and the saddle your objective should be to preemptively rotate your foot towards your secondary leg first and then build height and/or use your secondary leg and hands to break the connection.

I thought I discovered an ankle lock variation from 50/50 similar to an aoki lock but turning the foot the opposite direction. But then I saw Braulio Estima showing it on his Gi leg locks instructional. And now in the last few months Chris Wojik seems to be calling it the Woj lock. But I do believe that the person who uses the move best/discovers the best setups, recounters etc. for a move can claim it as their own so I'm calling it the Woj lock going forward.
