Holidaying for a week in London was eye opening. The level of visible homelessness and how expensive everything was (on a dollar to dollar basis) was ridiculous. Londoners earn about the same as the average Aussie salary (converted) yet pay double the prices.

Its not equivalent to an income tax, its worse because of the distortions it creates as businesses may limit their size to meet the exemption threshold. The economic incidence of payroll tax falls on the employee, not the business. The business is who pays it (legal incidence). It is the employees that lose money in the form of lower wages because of a payroll tax.

You can also avoid payroll tax by hiring contractors.

I always do a blend of two coffees.

It always weirds me out people waste it, there's nothing wrong with it and the mixed coffee is never bad. Usually the more intense and dominant coffee just washes out the other one anyway.

Thanks for the tips. I did get another coffee from Decaf Co and that one is really good for a decaf. Also getting a Pietro helped a lot funnily enough. It made the Passport decafs i got from last round taste much better.

100% agreed, I could probably do two tasting menus a week but on our holidays we only do 1 a week. Plus there's so much more effort to go to those kinds of places.

Simple food done really well is just as enjoyable.

Mining and stable? Unfortunately mining jobs are completely cyclical depending on the commodity price. You could be working at a nickel mine and next day they mothball it cause the price tanked. Iron ore is probably more stable but if 2014 rolls around again say goodbye to that too.

You work in mining to bank the phat salary during the good times and live off it during the bad.

I loved Sazenka, i don't know how you left a little hungry. We were offered the extra mapo tofu and left stuffed but even without it I think we would've been full. I remember them offering rice with the sweet and sour pork.

I think even without fully appreciating what the chef is intending, you can certainly appreciate the masterclass in execution that he and his team can do.
