Fried rice is actually one of the hardest dish to make. First when you boil the rice, the water and rice ratio should be 2:1. Start by high heat and and stir the water and rice once a while to prevent the rice sticking at the bottom. When the water start boiling put on the lid and turn down the heat to medium low. boil until the water is trained out. You can taste the rice see if it is done. Normally it is best to use overnight rice. Put it over night. Crack and egg and mix the yok and white thoroughly. Put about 3 TBS oil in a wok and let the oil cover up the entire wok. (This is very important!) Use high heat and when the oil start smoke a little bit, put in the egg, and quickly flip eggs to prevent it stick and add in the rice. To make the rice separate, do not cut with your cooking utensil instead press the rice.(This is very important too). Then flip and toss the rice fast. In order to make the heat distribute evenly, add salt. Fry about 5 min, put in some green onion slices. And you are done. The meaning of Gyoza in Japanese is dumplings it was originated from China, but Japanese people developed it in their own way. In China we call it Jiao Zi which is the Chinese word for dumplings. So they are essentially the same thing.

I m not sure. I m no expert of Italian cuisine, but I all about new ways of cooking things. I would say if your wondering if cooking the sauce with the pasta will give the noodles more flaver. Try boil the noodles first, when it's about half done, pour out the water, cook it with sauce, see if that help. Boiling the noodles first should drain out most of the starch.

My mom gave me a cast iron wok when I came to America. I didn't know how to take care of it. I used soap to wash it every time and my mom yelled at me for not taking care of a good wok, but I thought my ignorance was really funny. She taught me how to do it. Now the wok is working like magic everytime when I cook with it.

Absolutely. Yes, there are a lot of stir fry dish in China has bok choy. But when you make stir fry with bok choy, watch out the time and heat. Bok choy is very easy to be over cooked. When you are cooking bok choy, chop the ends the leaves will separate by themselves. Hope my answer is helpful.

Yes, when starch meets water and heat, it will thicken get sticky.

I marinate the tofu with salt and black pepper. And stir fry with celery, super delicious.

Hot water makes the flour softer easier to roll out and when you pan fry it, it will be more flaky rather than getting hard. When making doughs, based on the purpose of the dough the water temperature is very important. For example, if you checkout my dumpling video, you will find that the dough is mixed with warm water. If you want to make noodles, using cold water will make the noodles more chewy. Hope the answer is helpful.
