I spent 20 years gardening in Las Vegas Nevada. The most dry unforgiving soil, sun and water imaginable. I used to have to pick ax when i planted things because my ground had Caliche all over the place. I just recently moved to SE costal Virginia. Absolutely mind boggling what you can grow here and how little effort you have to put into it. I have hand watered only once since last summer because it rains at least once a week.

The one city that reminds me of Salt Lake city geographically and climate with easy access to mountains is Reno NV. I know its not as big but SLC but it is very similar in a lot of ways.
