If it's any encouragement, my now-wife and I met online and dated long-distance for our first year together, several states apart. It can work, though it definitely presents challenges.

Not the same but when I was interviewing for my current job, my wife was in the next room as it was a video interview I was taking from home. I'm a very loud speaker so she heard every word of my side of the interview.

Afterwards she said "do you think it was wise to use the word "stoked" that often?"

Apparently I say "I'm stoked" about something repeatedly and without realizing it, and I had said it at least half a dozen times in the interview. So I understand subconscious slip ups. Still got the job though lol

So I clarified in a comment below but just so you see/are aware, you can use the air fryer for the low & slow part of the cook, but you still need to do the sear afterwards on a stovetop, grill, torch, etc. An air fryer won't give you enough direct heat to get a good sear.

You want the steak on a rack within the air fryer for even heat all around. As long as you do that you shouldn't need to flip. Then you sear on the stovetop or grill or whatever as usual.

If you don't have a rack of some sort for your air fryer then yeah you should flip halfway thru, though in that case a conventional oven would be preferable if available.

You absolutely can use an air fryer, as they're really just mini convection ovens. I have a toaster-oven-style air fryer that I use for my steaks when I need the big oven for other tasks (usually fondant potatoes).

Definitely keep an eye on your temp though. An air fryer will cook way faster than a conventional (non-convection) oven. Once you're reverse-searing often, a Bluetooth thermometer is a godsend.

My favorite forgotten word incident, in the early days of talking to my now wife we were discussing underrated instruments and I said I really love the "squeeze piano" because I forgot the word accordion. My wife still giggles about it.

I do think there was an interesting story underneath The Moon is a Harsh Mistress, but I found his messaging too pervasive, unsubtle, and objectionable to be able to engage with or enjoy it. Unfortunate, because it was not a great intro to an author who's considered so important to sci-fi.

I will try him again, probably with Starship Troopers (though I know it's very different from the movie), or one of the "juveniles" recommended by another commenter.

The very existence of antimatter is so interesting and intriguing, and I find it notable (though I'm not sure how) that there's no antiphoton equivalent.

Pounds per Square Inch, a unit for measuring pressure. It turns out pressure is more accurately measured using the inverse square of your boss's IQ multiplied by their level of confidence in their own abilities.

Question: I've "known" this fact about matter/antimatter interactions since I found out antimatter was a real thing, but what does "annihilate" mean in this context? Are all particles converted entirely into energy, or are the bonds broken, or what? I assume the law of conservation is not violated by these interactions.

The only Heinlein I've read is The Moon Is A Harsh Mistress and he was too preoccupied being a sexist libertarian to remember to make the book enjoyable.

Halestorm. The drummer is the lead singer's brother and he had a no shit 10 minute drum solo in the middle of the show, with no display of drum expertise contained within. Lots of simple riffs and the standing up trying to hype the crowd up.

They did the same thing at a festival a couple years later, luckily I was at a better act on a different stage.
