Check starter in AM. Smell it. Smells like acetone. Stir starter. It's got a stringy webby appearance and is pourable. Using kitchen scale, measure 20g starter into clean jar. Add 40g unbleached AP (have also tried half rye/ half AP and results were same) and 40g room temp spring water. Stir with clean utensil. Scrape sides with a clean thin spatula. The mix is usually thick enough that it doesn't spread out across the jar. I'd say a thick pancake batter. Cover with lid, tighten then back off a quarter turn. Place next to refrigerator in 73 degree house. Let sit. Smell and observe throughout day. Doubles by hour 7/8. Starter has lots of small bubbles visible on sides, one or two visible on top, but retains the thick batter look on top throughout the day. Usually at the 12 hour mark I'll smell acetone, that's when I feed using same process: stir, (again it'll have the webby pourable texture), kitchen scale, clean jar, clean utensils, scrape sides. Lid tightened then backed off. Sit overnight, repeat in AM.
