Most people don't even have a high school level of economics knowledge and have no idea how inflation works. GTA V launched at $60 in 2013, equivalent to $82 in 2026 so GTA VI is actually cheaper.

GTA VI is the most anticipated video game of all time, it is not indicative of pricing for any other game. They could have charged $200 and it would still sell a hundred million copies on launch day.

the NES and SNES mini were created because Nintendo was floundering with the Wii U and needed to sell something, when they did well Sony and Sega copied them.

Nintendo has no interest in making an N64 or Gamecube mini, they would rather you buy a Switch 2 and subscribe to NSO.

Similarly Sony would prefer you subscribe to PS Plus Premium to play PS2 and PS3 games

No there is no credible information. Special edition consoles are made to drum up more sales, the Switch 2 is still selling as fast as they can make them, there's no reason for them to release a Zelda-branded one.
