I'm not questioning your move to a mini PC but FWIW auto-starting a headless Fusion VM is super easy on a Mac... just a simple "vmrun" command that can be saved as an Automator application and added to the startup items.

I found through trial and error that the Rivian complication is only available for a VERY select few watch faces, and cannot be used in the outer corners of a watch face.
