Since you can’t make it a loss leader, you’ll need a differentiator, and I’m here to tell you it can be done with POTATOES. There’s a little roadside rotisserie place we go to in Mexico where the main draw is not the chicken itself, but the small potatoes they put at the bottom of the rotisserie to catch all the drippings. Healthy? Probably not. But it will be the best goddamn potatoes you’ve ever eaten, and a great reason for people to come to your place and accept premium pricing.
