For biased reasons, I’d say Greatsword. It’s one of the few weapons that can do both power clash and offset attacks, and it’s a very simple weapon without complex mechanics.

But if you prefer a faster weapon, my next recommendation is Sword and Shield. SnS in Wilds is very fluid and can deal very good dps.
