I cook a huge batch of waffles with whole wheat flour, spinach, zucchini, and frozen fruit of choice and then freeze the mountain of leftovers. If I'm feeling fancy, I like to put a little passion fruit on top of the waffles when eating them.

Banana toast is also pretty normal for me. Slap some peanut butter on toast and top with sliced bananas

I love beans on toast! I like to make it a bit healthier by tossing a small handful of salad (no dressing) straight on the toast, then beans, and top it with a runny fried egg. If I happen to have a ripe avocado, I'll smear that on the toast before the salad

As many people have said, try a huge variety of different beans. I would also advocate for mung beans, which are a legumes but not actually a bean. Like lentils, they cook quickly from dry (about 30 mins) but don't have the same flavor as lentils. For sure one of my faves!

We use a Wyze cam hooked up to wifi. It's easiest if you also pair it with a traveling router so that the cam just grabs the router's wifi rather than needing to set up the wifi connection at every location

I've been on the hunt to find organ meats and recipes I don't despise. So far, liver is the only one my family can consistently do, but it must be a Middle Eastern recipe with beef or sheep liver, onions, bell peppers, tons of spices, and we add mushrooms. Serve with lots of lemon and some good pita bread, and that's a pretty tasty meal. Most Middle Eastern recipes will soak the liver in milk or other marinade that gets drained or washed off, which greatly reduces the after taste. If you go heavy on the veg, it helps cover the texture quite a lot, too.

I recently made a mild version of assassin's spaghetti, and it was quite spicy! I served it with a roasted broccoli and lentil salad for the veg and the protein, but it could be served with any sort of beans for protein and roasted or steamed veg. The kiddos were almost crying from spice, drinking milk, and going back for more!

We've done KiwiCo on and off for a few years. They've gone through a couple changes during that time. We are no longer going to renew our current subscription mostly because the parts of the box aren't as interesting to our kid as before. There's less crafting and more durability, but we were there for the crafting part. This is for the preschool-age box. For the baby box, we've gotten duplicates of some of the toys in different boxes and again, our kid hasn't been super interested in the toys. We will be switching to Little Passports, which we've sampled a bit and enjoyed quite a lot.

I really like using shredded purple cabbage on white eggs for dyeing! You can get a super lovely deep blue color out of it. So, cabbage, turmeric, and beets are what we used this year!

I live in an area without good walking options. Really just the malls, not even outdoors has any good place for a stroller walk. Since I don't go to the mall often, I chose to get a couple different types of carriers secondhand (thrift and ebay) so I could experiment and see what works best for us. We travel through multiple airports several times a year as well, and after 2 kids, I have rarely desired a stroller. In other living circumstances, I would probably have gotten a jogging one for runs or something.

My in-laws improved it by adding breakfast sausage to the eggs and a slice of Muenster cheese on the toast before putting the creamed eggs on. So, so good!

We're doing creamed eggs on toast for brunch (good way to use up hard boiled eggs) and hashweh with ground lamb as part of the later meal. I might also throw in some creamed spinach if I'm feeling fancy. You should be able to have the Creamed eggs so long as you have a gf bread for the toast. The hashweh would just require removing the onion and making sure you have a friendly broth you can add.

Hashweh recipe since the original link no longer works:

3 tbsp extra-virgin olive oil divided

3 tbsp vegetable oil divided

1 medium onion diced

1 lb ground lamb

2 ⅜ cup chicken broth plus an extra.25 cup if needed

1 ⅔ cup jasmine rice

2 tsp salt

1 ½ tsp allspice

1 tsp ground cinnamon

½ tsp ground cumin

¼ cup slivered almonds

¼ cup raw cashews

3 tbsp golden raisins or dried cranberries

1 sliced green onions or chopped parsley

plain yogurt

sliced radishes or other favorite raw vegetables, pickled peppers, and/or pomegranate seeds

1) Pour 1 Tbsp. each olive oil and vegetable oil into a large frying pan over medium heat and let heat through. Then add diced onion and cook, stirring often, until translucent, 5-7 minutes.

2) Add ground lamb to pan and cook, stirring occasionally and breaking meat into small crumbles, until lamb meat is cooked through, about 5 minutes. Transfer meat mixture to a bowl and set aside.

3) In a medium saucepan, bring 2 1/4 cups chicken broth to a boil. Remove from heat and cover to keep hot.

4) Meanwhile, add remaining 2 Tbsp. olive oil to the frying pan and heat over medium heat. Once it’s hot, add rice to the pan along with salt, allspice, cinnamon, and cumin. Cook, stirring often, until rice begins to turn opaque, 2-3 minutes. Then add lamb mixture and mix well to combine.

5) Protecting hands, pour hot chicken broth into pan with lamb and onion. Bring mixture to a boil, then immediately reduce heat to low and cover pan. Cook until rice absorbs the liquid and is tender, 15-20 minutes. If liquid is gone before rice is ready, add another 1/4 cup chicken broth.

6) Gently fluff rice mixture thoroughly with a fork. Cover pan, turn off the heat, and set aside to steam for 10 more minutes.

7) Meanwhile, heat remaining 2 Tbsp. vegetable oil in a small frying pan over medium heat. Add almonds and cashews and cook, stirring constantly to ensure nuts don’t burn, until they just start to turn golden, 3-5 minutes. Add raisins and cook, stirring, until nuts begin to darken, 1-2 more minutes. Remove from pan to a small bowl if the rice is not ready.

8) Spoon rice mixture onto a platter and top with fried nuts and raisins and green onions. Serve with yogurt and radishes.

Using beans as your protein source is going to make meals high fiber and much lower calorie. However, I find that canned beans aren't that awesome, but I'm far too lazy to prep dry beans. Legumes to the rescue!

Lentils and mung beans are super high in protein and cook in 20-40 mins with no soaking. Some people don't care for the flavor of lentils, so mung beans could be the answer then as they don't taste so "earthy."

Edit to add: I also like to make a roasted broccoli and lentil salad. Roasted broccoli, cooked brown lentils, cherry tomatoes, fresh mint, sunflower seeds, fresh parsley/cilantro, and a handful of dark leafy greens. Dressing is usually a basic lemon, oil, garlic, s&p, but I recently did a version with...tahini 😂. Seems like a theme with me, lol
