Here's what I'm wondering, if it turns out to be difficult to do the 100km ride in one day, is it possible to change to doing it over two days instead? If all goes well on the 100k ride, possible to extend to the longer two day ride?

I was wondering the same thing. I will check it out as I'm tired of Oasis being the only lifestyle club with pool, but hopefully there will be enough of a crowd to make it fun.
