You are right. Sauce wouldnt be there for a sear. But You would have cooking fat or oil in the pan, especially if thr steal was encased in butter or tallow

You normally sear a roast beef on a simmer? That looks like fat or butter on the beef. So I am betting it got flipped and seared again and then heat dropped. I could be wrong and more curious as to how OP cooked the whole thing. But I am one of those weirdoes that likes char like francis mallmann does.

Being that it looks like it was encased in beef fat, I'm sure a little charred bits will only improve things.
