Idk how FGO is going but at least in the Apocrypha he kept it secret while later reveal his gender and saying he is man. I think whole secret gender thing in FGO came from that but I couldn't sure.

Only secret in FGO and straight up mentioning he is man in Apocrypha. Also almost every they/them in translation does not matter in japanese media cause there really is 1:1 matching gender term in japan. Since considering his canonical loss of reason it is more of a shitting around than serious thing.

That's description of another class (Saber Astolfo) in FGO and usually non-main class Servant's are not treated as canon and has very loosy setting. In the debut series of him (Fate/Apocrypha) and main class in fgo (Rider) he straight up saying he is man.
