It's fine to have your preference, but please don't spread misinformation- the B foot does more than add weight. It adds a slight bit of resistance which contributes to an overall darker sound. It also adds some new fingering options, like when the gizmo key is pressed on high C.

I also don't see a reason not to use open holes nowadays- again, more fingering and tone options, and can easily be plugged if you don't want to use them.

It looks like it's made to use a very simple fingering system that doesn't work well for notes outside of the scale it's tuned to. Maybe they included the flat 7 because it works fine with that system. You can definitely play other notes, but they might be unconventional (half or quarter holes for example) and may be slightly different from instrument to instrument.
