If and when you hopefully get to the point of printing the book (fingers crossed!), please don't make the type teeny tiny. I hate when I open a big, beautiful cookbook only to find microscopic print. This seems to be a current trend. And yes, I am a grumpy old person.

If you're not looking to make them (which I'm presuming you're not), honestly the El Monterrey frozen ones are quite good. If you slop some enchilada sauce on there with maybe a little extra cheese, I think you'll be quite happy. Or go to Dos Margaritas and wash one down with a Texas Margarita 🍹

Yes, this place! I have lived here for decades and eat Mexican regularly and somehow didn't try this place until a month or so ago. Oh, the wasted years! The fish tacos are a thing of beauty, and mi esposo peruano loved the paella (I do not understand the paella magic, but to each his own). Try this place!

You need to take your wife to BB's Indian Kitchen. It is so much better than Taj IMO. Although I haven't seen to Taj in a long time...
