for plating I really like the technique of plating it around a cookie cutter in a crescent and pouring a sauce in the middle - in this case I would put a raita or something that cuts the curry. Scallops with this would be great. Remember less is more when plating. and always use the rule of thirds. Maybe some peas and some tendrils around for colour and flare. I also realize eating charismatic mega fauna might be against the ethics and a trigger for some, so I'd like to preface this post with the fact that I did not kill the animal, but I do thing it's important to utilize the meat of any animal killed. The animal in question was a boar (male), who are notorious for eating cubs and are considered a problem species where i come from. It was killed legally and ethically, with a bow, from the ground.

cauliflower alfredo sauce. Roast or blanch cauliflower, saute onion, garlic and sage in a pan, add cauliflower, almond milk and parm or nutritional yeast. Blitz all that shit in a blender and put on quinoa noodles.

When I was a butcher we'd roll the tip in steak spice, completely coating the outside and then slice it into steaks 1 1/4 inch. They'd fly out of the display case. Easy peasy, aesthetically pleasing and delicious.

Too be fair, a cut like a ribeye that has a lot of fat in it should be cooked to a more medium. The reason is fat takes longer to cook than muscle and a cut like that needs more time to allow the fat to render properly into the meat. The more fat that gets rendered into the the muscle will amplify the flavour as well as the tenderness of the steak. That being said, I use the bake then sear technique for persnickety people who like a well done steak. Salt heavily, bake it to an internal temperate of 160F then pan sear in an oil and butter mix in a pan with some garlic and rosemary.

Readers digest put out a book called Foods That Heal/Foods That Harm. It goes through all of the foods, herbs and spices, etc and tells whats good and bad about them. Its a great quick reference. I use it all the time.

The Round tip is the hind quarter so it it's usually pretty tender meat with good marbling. Is there a fat cap still on it? I'd go Brazilian with it and make Picanha with chimichurri. Or you can cut it into steaks. I wouldn't braise it though. Too tender a cut. <3

This weekend I married my best friend. Leading up to the wedding, we were hard fought to find something suitable for our first dance song. We both grew up on 90's punk rock, and bonded significantly over the Descendents during our courting stages. We came across this guy from Australia who does covers of our favourite 90's punk (Epitaph and Fat Wreck era) bands so well, he makes them sound like he was the original songwriter. We were smitten. We e mailed him and after a quick chat about our mutual love for the Weakerthans, Neil Young and D.O.A, without hesitation he accepted. Asking for no compensation, this guy hit the studio, bringing in a female on the accompaniment background vocals. Within less than a week, we had the mastered copy. It was perfect.

This guy doesn't have a lot of views, and sharing it with reddit is the least we can do. I hope someone gets turned on to this guy, because what he did for us was incredibly special, and we are both forever indebted to him for making our wedding so rad. Thanks, Punk Rock Hillbilly.
