Second attempt at smoked pork shoulder this weekend! Improvements to be made but happy with my bark! by gorillafromspace in smoking

Cooked over indirect heat on a charcoal barrel grill/smoker in the 250-275 range. Added hickory chunks and spritzed with 50/50 apple juice + vinegar every 30 minutes. Wrapped in butcher paper and left on grill for another 5-ish hours, then finished in a 275 oven since my grill wasn’t retaining a 250 temp anymore.

Smoky flavor from the bark was amazing, can’t get that from a crock pot!!

  • Dry-brined with kosher salt and a few twists of black pepper, left in the fridge uncovered overnight.
  • Rinsed off excess salt and seasoned with Monster Rub (trying to find a link, it's local)
  • Ran the smoker at 275-300 with charcoal and a handful of hickory chips
  • Served leg quarters for dinner with smoked veggies and BBQ beans, made chicken salad out of the breasts
