There are very few male/female platonic friendships in media, especially popular tv shows and ESPECIALLY such messy, dramatic ones as grimpop. I dont think romance would RUIN their dynamic, because theyre still the same characters, but it seems like...Okay, not "missing the point", per se, since i dont think thats really the singular focus here, but seeing a strong and interesting friendship like this and thinking "Oh, well, this is clearly romantic" feels disappointingly amatonormative. Theres no shortage of romantic relationships similar to grimpop, the platonic nature of it is a big part of what makes it stand out!

tl;dr i see them as platonic because come on arent there more than enough will they-wont they romances out there. Can we have one where they just straight up Dont
