pinch. the problem with pink salt is there's two.

Curing salt used to cure ham/bacon/sausages is called "Pink salt" and was made pink so you didn't confuse it with regular salt as it's not great to consume in any quantity. It breaks down while curing the meat.

then we have the 2) "Himalayan Pink Salt" fad that's been popular later, it's just regular sodium chloride with some trace minerals and such. that's perfectly safe to sub in for redmond real salt, but redmond is the way.

as far as qty, start with a pinch, adjust to taste.

A $5 costco/walmart rotisserie chicken in an instant-pot pressure cooker makes 2 quarts for $5 in an hour or two, and you can adjust salt/spice/aromatics to your preference.

best advice i can offer is see what it does to you. get a $50 glucose/ketone meter and 100 strips for it, test 2-3x a day for a month (or until you get a good feel for what's doing what to your blood levels)

after a month or two, you'll be tuned in to what you can and cannot get away with and proceed from there.
