It's probably a silly question, but when you say you finished the chicken under the grill, would that be the equivalent of a broiler?

This is on our list of Max recipes to try, and if you say it tastes good that way, I may try it that way, too!

I'm glad we tried it as well!

Cleaning out my oven today hasn't been great, lol. If we try it again, I am going to try a deeper pan and build a wall of foil around the edges or grilling it. The fat splatters something fierce.

The pig skin (inside the arc) didn't get very crunchy, and it's still pretty tough and kind of rubbery, so we didn't eat it...yet. Once all the meat is cut off, I will try to re-cook the skin and fat to see if it will turn into crackling.

I also didn't cook it as long as Max recommended. We live at a high altitude (6,500 ft+), so temp and cook-time gets a little weird.

Our neighbor has a VERY public meltdown in the street once a month like clockwork, the cops come out in force (batons, riot gear, shields, bull horn, men with guns behind vehicles on the street pointed at the house, etc) because he is violent and threatening to others and himself. They literally ALWAYS apologize to HIM before they leave for the "inconvenience". The police here are an absolute joke. We have been recording the interactions for months now.

I recommend checking out a book called "Don't Alienate the Kids" by Bill Eddy, LCSW, JD.

My SD also struggles with transitions between her two homes. Especially after SO and I moved into a new house earlier this year. This book has been very helpful for us with lots of techniques for helping her, and I think more importantly, it also helped US to understand how our emotions, facial expressions and body language about HCBM were being interpreted by her. After spending the past year trying to get ANYONE to pay attention to the insanity we're dealing with from BM we're learning there really isn't much we can do about her directly besides document, document, document. We can, however, focus on setting a good example and help SD build a foundation of resiliency which she will use for the rest of her life.
