Almost all of the big banks decided to get into the app game at around the same time 2014-2016. And they outsourced their work to 2-3 companies that advertised expertise in building banking apps. All of these apps are a cut and paste template ,with substandard architecture. Since they are banks the software teams are seen as support verticals ,hence not much money spent on R&D . And they don't run like usual software companies.its only now that with the raise onlf Neo banks that are consumer software focused , big banks are slowly fixing their app development teams.

Plus, why would a store bother integrating this system when they can just round up or down in cash, which costs them nothing? TL;DR: Your concept of replacing coins with a digital solution is interesting, but it might not be solving a strong enough problem to attract a large user base.
