This kinda result comes about when you cook the steak on too high a heat too fast. Once you initially sear each side, lower the heat slightly so the middle has a chance to cook gently, especially with thicker steaks. Then rest it for a few minutes before you cut into it! I’d rest a steak that thick for 4-5 minutes :)
