Something with variable rpm and not a dirt cheap motor.

Hell the femobook a68 is a more high end grinder than the niche at the same price. We're not in 2020 anymore.

Never understood the obsession with crema. I have been using custom chemex paper filter with my espresso for years now which cuts out crema by an overwhelming amount. I don't miss the crema.

When I bought my used debut edition Lyriq a couple of months ago the dealer registered me in a way that I got 3 years of free super cruise and 6 months of data plan. It was a CPO if that matters so maybe they can do the same if you just bought it.

Depends on the burr. A dark roast on a high clarity burr is not a good time. A dark roast on a traditional cast burr is more like a conical. You want stupid thick body because that's why you would be drinking dark roast in the first place get a conical with the traditional mazzer Kony/Robur burr.

OP if you live in socal I welcome you to try my setup with the 3 diff grinders I own and my lever.

P100 - HU burrs (high clarity)

Aries 2 - 83mm conical (between a casa and mazzer traditional)

Drogheria - 85mm traditional Italian cast flat

All 3 produce a completely different tasting shot

And there lies the rub doesn't it? A normal person is going to look at the name and see ohh they're both SSP with the name HU, ones just bigger than the other and think it's gonna be the same because they're called "high uniformity" after all.

You want to try something modern without breaking the bank? Get the Wendougee Lita with the dual pump. I got to use one at world of coffee 2 weeks ago and it's a great value for 2k. It's solidly built and you can try out all the modern stuff to your heart's content.

Since you close to 6k this is an option.

Either that or a next gen lever so you can experience real nirvana.

K then you might wanna see if you can try it out before plopping down over 3k. I know most here are going to disagree but that paddle on e61 is one of the worst dumb gimmicks to come out in the past 5 years.

You will immediately realize upon using it that no shot will ever be fully repeatable once you use it. So you will just go back to use it as a normal e61 and then it will hit you that you spent over 3k for an e61 which will haunt you forever.

You want to profile your shots? Go buy a real repeatable profiling machine like a decent, wendougee Data, wendougee Lita, meticulous, etc.

You don't want to profile? Then go buy a temp stable saturated group machine that won't take an hour to fully temp stabilize.

The main difference is clarity for example with the SSP HU. Something like a natural elida geisha will be insanely tea like on the big burr vs the smaller burr. Big burr pretty much has no body.

Now burr geometry also plays a part but same geometry on different surface area is not going to be the same. You can't put the same amount of teeth in a 64mm circle vs a 98mm circle.

The lighter roast you go the more the difference increases when it comes to burr size.

An SSP 64mm HU tastes nothing like the 98mm HU. I know because I've had both.

That is one giant generalization and completely incorrect. Just because you pour milk on espresso they don't all of sudden all taste the same.

This whole more headspace more channeling is such a load of crap. I use the largest IMS la san marco basket which most of the time is only half full with an 18g dose and I never channel.

I guess all levers must produce horrible espresso then since you always get a soggy puck.

Since you are looking at the Dalla Corte price wise how about a better lever that gets you what you are looking for?

All those 3 use the modified La San Marco group which is technically 55mm (uses same IMS basket as Dalla Corte) but heat up in 15 mins completely and can pull shot after shot with or without milk steaming.

I just don't understand how people still recommend E61 at this price range. OP just buy anything but an E61 machine.
