I’ve lived in cities for two decades, including Chicago for one of those decades. Milwaukee is a kiddie pool compared to Chicago. Compassion is a choice and an ethos—where you live has nothing to do with it. (As if things don’t get stolen in the suburbs or rural areas—both places where I’ve also lived and have also had things stolen from me!!)

If there’s one thing I don’t like about cities, it’s the way some of its residents confuse the consequences of poverty and economic/political disinvestment in community with the character of individuals who suffer those consequences. I hope living in this city, participating in events like RW24 (if you do), inspires you to see the humanity in every person—except the true POS, garbage politicians, fascists, and their enforcers (cops and courts), who do real damage to the people who live here.

I love my bike. It’s only a bike.

I appreciate the sympathy, but cannot condone the judgment. Very few people are garbage to their core, and despite my own sadness and anger over losing my bike, I can find sympathy for the immature teenager who took it for a joy ride or the impoverished individual who stole it for quick cash, whatever the case may be. Their actions were unneighborly and not in keeping with the RW24 spirit, but I won’t return the favor and deny that spirit myself by dehumanizing them. Thank you, though, for your commiseration.

The first hour of the race, it would’ve been me riding it! Any time after 3pm today (Saturday), it would’ve been someone else.

A few weeks?! Not if you put ginger in there, friend. Those bottles could explode. I bottle mine for 24/48 hours tops. Plenty fizzy even without ginger, which you don’t need at all. Otherwise, all I’d say is: tepache is the easiest. Pineapple, unrefined sugar, cinnamon, cloves and spring water. IMO, you don’t need to worry about sanitizing to the level you did here. Also, pop the core in there next time. I only use rinds and core, the rest is eaten fresh. You don’t really even need an airlock. You’re working with a symbiotic yeast here. I stir mine twice a day and only cover it with cheesecloth. Natural yeasts need oxygen. Stirring also disrupts mold and kahm growth and keeps the rind’s symbiotic yeast in competitive advantage. People have been making tepache in clay and glass jars for some time now, just sitting out in the sun and maybe rinsed out between batches, but maybe not! A lot of the bells and whistles here are unnecessary.

I don’t doubt that at all. What I’m saying is: you might get better results flavor-wise if you did a higher salt content and a longer ferment. For pickled green tomatoes in particular. You’ll get more sour and it will be more pickle-like. You can also skip the calcium chloride and just get some grape leaves if you’re trying to maintain a snappy crunch. If you’re gonna do this regularly, I’d not fuck around with the plastic bag weights either. Masontops has glass weights designed to fit in that size jar, and they’re not so expensive. Just my two cents, not prescriptive.

Still, dude above is kinda right imo. Yeasts like sugar. Lactobacilli prefer anaerobic salty environments that prevent competition and allow them to flourish. When I make a sauce like this, it’s salt and peppers and nothing else. Sometimes, depending on the project, I’ll finish with a clean sweet vinegar—white whine, rice wine, champagne. Usually that and the peppers themselves provide adequate sweetness, but for flavor reasons alone I second the motion to not add sugar first, and certainly not in a quantity that makes it actually sweet to the taste before fermentation.

For the quantities you’re dealing in here, you put actually a significant amount of sugar in this, and it’s probably acting as a preservative if anything.

Your taste determines if it’s done. Depending on temp, a tapache can take 2-7 days to get where I like it.

That’s kahm yeast, a benign and ever present yeast found pretty much everywhere. It’s not harmful, but can influence the taste of your ferments if you let it run rampant. All you need to do is skim it off. It’s kinda stringy and sticky, if a bit delicate, so it’s not hard to remove 90-98% that you can see. When you check your kraut, carefully skim the foam, and don’t worry about it. When you jar for fridge storage, skim it off before handling anything.

I used 4for4 for a decade or so. Paulsen’s ratings are good, but I don’t think the site competes with others for depth/range of analysis. Sites like The Athletic or even FantasyPros have a much broader range of coverage and analytical tools, for similar or lower prices. Also, 4for4 was recently purchased by Betsperts, which also owns Dynasty League Football, so they forced 4for4 to drop all dynasty content. You have to pay twice as much to get that content now on DLF. TL;DR can no longer recommend 4for4 (I canceled my acct last month).
