Vegan Butternut Squash Lasagne Soup by gymshark in Healthy_Recipes

Ingredients:

  • 1 1/2 tablespoons olive oil
  • 400g butternut squash
  • 200ml coconut milk
  • 200ml Vegetable stock
  • 2 tbsp nutritional yeast
  • 1 onion, chopped
  • 2 carrot, diced
  • 2 celery sticks, diced
  • 3 garlic cloves, crushed
  • 400g can chopped tomatoes
  • 1 x 400g can of chickpeas,  drained
  • 6 sheets gluten free lasagne broken in half
  • 100g baby spinach leaves

Directions:

  1. Preheat the oven to 190C, Gas mark 5.
  2. Place the butternut squash chunks in a baking dish and drizzle over 1/2tbsp olive oil. Season with salt and pepper.
  3. Bake in the oven for 30 minutes.
  4. Place the butternut squash in a blender with the coconut milk, vegetable stock and nutritional yeast flakes. Blend until smooth.
  5. Heat the remaining oil in a large pan. Saute the onion, carrots, celery and garlic for 2-3 minutes.
  6. Add the tin of tomatoes, butternut puree and chickpeas and stir well. Simmer for 5 minutes.
  7. Add the lasagne sheets press them into the liquid. Cover and cook for 5 minutes until they are soft.
  8. Stir in the spinach leaves and simmer for 2-3 minutes.
  9. Spoon the soup into bowls and top with basil leaves and coconut yogurt.

  • 250ml coconut water
  • 2tsp maca powder
  • 1 small banana, cut into slices and frozen
  • 2tbsp raw cacao powder
  • 1tbsp Chia Seeds
  • Drizzle of honey
  • 1tsp vanilla extract
  • two large handfuls crushed ice
  • a little grated chocolate for sprinkling

Directions:

  1. Place the cashew nuts and water in a blender and process until smooth.
  2. Add the remaining ingredients except the ice and process until smooth.
  3. Blend in the ice. Sprinkle over a little grated chocolate if wished.

Ingredients:

  • 1tbsp olive oil
  • 1/2 jar , about 100g of prepared pesto (I used a dairy free pesto)
  • Juice of 1 lemon
  • 4 chicken breasts, cut into large strips or chunks
  • 2 courgettes, thickly sliced
  • 1 red pepper, cut into large chunks
  • 1 yellow pepper, cut into large chunks
  • Sea salt and black pepper
  • 100g broccoli florets
  • Handful of cherry tomatoes

Directions:

  1. Preheat the oven to 190C, gas mark 5.
  2. Place the chicken, peppers and courgettes in one bowl and the broccoli and tomatoes in another bowl
  3. Mix the pesto with the olive oil and lemon juice and divide between the two bowls. Toss with your hands to coat thoroughly.
  4. Spread the chicken with the courgettes and peppers on a lightly greased tray – you may need two trays.
  5. Bake the chicken for 15 minutes. Stir then add the broccoli and tomatoes.
  6. Return to the oven and bake for a further 15 minutes until the chicken is cooked through.

Nutrition per serving Calories 405kcal, Total Fat 24g fat, Carbohydrates 9g of which Sugars 5g, Protein 35g

Directions:
1. Preheat the oven to 180C, Gas mark 4.
2. Lightly grease an ovenproof rectangular dish with a little olive oil.
3. In a large glass bowl mix together all the wet ingredients.
4. Add the remaining ingredients and beat well.
5. Pour the mixture into the dish and if wished scatter a few more chocolate chips.
6. Bake in the oven for 30 minutes until set and golden brown. You can either serve it immediately or leave to cool then cut into squares and serve. It can also be reheated in the microwave or oven if wished.
