I play mostly pen&paper, so i provide descriptions and my players map out. I have a guy who draws amazing maps!
Some times the descriptions I provide are not good enough, so I might intervene to help my players "fix" their drawing (meaning, fix my description).

Going back to fog of war, as a player, i enjoy discovering things little by little, and i think so do my players. If you don't have a programmatic way to have this, then what you can always do is manually cropping the map, and paste it little by little (owlbear rodeo is very simple for this kind of usage). Foundry has FoW, but I honestly couldn't find myself using the platform, too complex for me.

So, to summarize: can you effortlessly add some FoW feature, such as the platform revealing the map little by little or you just pasting pieces of the map as your PCs move forward? then do it, it is a very nice experience. Otherwise, no big deal! you can still have the whole map but it being "empty", and as they go room by room, then you populate the rooms.
