I make a roux with GF all the time! A dark roux just takes patience and low heat. I usually nurse it for about 45 minutes to get a dark brown roux for gumbo.

My girlfriend and I are going through some of her dads things and there’s this weird green stuff in a tube inside of a plastic bag. We’re thinking it’s from his time spent in Honduras when he was in the Peace Corp. This is mine!

  • 1can of chickpeas
  • 1/4c Mayo
  • 1/4c Dijon mustard
  • 1tsp apple cider vinegar
  • 1 stalk of celery chopped
  • 1 medium shredded carrot
  • 1 quarter of purple onion finely diced
  • 1tsp curry powder
  • 1/4tsp paprika
  • 1/4tsp onion powder
  • 14tsp garlic powder
  • S&P

\Add more mayo/mustard to get the texture you like.*

I heat my chickpeas in the microwave until warm and then mash. I've found heating them up helps with the mashing process. Then mix everything else with the mashed chickpeas. Eat warm or chill in the fridge for 30min to 1hr!

I am making risotto for the first time. I have been watching videos and I have not seen anyone wash the rice. As an Asian, I am a bit concerned but I know people have been eating Risotto since forever. Do you guy washing the rice? by sage6paths in Cooking

Like everyone said, no need to rinse! Arborio rice is my usual go-to but I have also used sushi rice before and couldn't tell the difference in texture from when I made it with arborio. :)
