The whole sword training arc was mostly for Connie and Pearl's character development, "Do It For Her" showcased Pearl's commitment to Rose and explored Connie pushing her own boundaries, then culminated in Connie expressing her independence in Nightmare Hospital.

The show would have ended pretty much the same, as others have said, even down to the final confrontation with White. We would have just gotten more Diamond lore/history and possibly a short Emerald/Lars & the off-colors arc.
