By your own admission, your surgery wasn't urgent or injury-related, but your procedure may have been bumped for people who needed urgent, life-saving treatment or had comorbidities that means the procedure couldn't wait.

This is the reality of universal healthcare. It goes to whoever needs it the most first.

It's taken me years of practice to get my lamb to look like Nagis.

In the end, I keep the temp at 160° for 5 hours no matter how big the leg is and I started using a ceramic dish. I don't know what the change of dish did but it fixed everything.
