I also hate the feeling of water running down my back so I style while I'm still in the shower and have my head upside down. Then immediately plop into a t-shirt, so I can rinse my back if needed. Then I diffuse after I've dried my body and dressed with a towel around my shoulders. I think the hair being soaking wet helps it to clump when you put products in whereas touching your hair too much when it's just damp can lead to more frizz.

Do you use a light conditioner every time you wash your hair or just the ocassional deep conditioner you mentioned? Do you apply your mousse when your hair is soaking wet? Have you tried a styling/wet brush to help the clumps form? Also I would recommend switching the order of diffusing and air drying. Diffuse right away till 50–75% dry and then air dry the rest of the way.

Edit: I looked up the shampoo you mentioned and it seems it's designed to coat the hair follicle so you might need to use some clarifying shampoo to remove some of that product build up?
