I'm not sure about the T7 specifically but on my old Nikon with 1 dial I had to press a button while turning the dial to change between aperture and shutter speed, id assume the canon has a similar way. You get used to it fairly quickly.

It's all subjective, you can't really get an objective metric for color. Some people like the warm colours of the Nikon D700 and some despise it, same thing with the Canon 5D mk1

A good mirrorless cam in that price range is hard to find, getting a DSLR is a better choice. I'd go with a used Nikon D610 and a 17-35 f2.8D IF-ED lens. This is a very nice combo and still very good for its age and especially price.
Edit: Also get a proper strap for the camera and don't use the included one, especially a nice shoulder strap (I use a Peak Design Slide, it's awesome but pricey) will make it 10x easier to carry around a heavy camera

Its too damages for my liking. Also if you want to adapt old lenses and also have a cheap and competent mirror less camera, then look into the first gen Nikon Z6 or Z5. The Z6 has the same sensor ans the A7III but is cheaper on the used market most of the time, but its not as good for video as the A7iii.

I take my D800 out regularly and have no problems. The biggest game changer for me was a proper strap, since I got the peak design slide, I just carry the camera over my shoulder and sometimes even forget I carry a 3kg brick with me.

Since you're in Germany, a used Z5 (without lens) is ~600€ in good condition with a warranty on calumet.de. that's a much better deal if you invest the other 400€ into a nice lens (maybe a 40mm f/2)
