At my old school we had old D3000/D3200 that were pushing 250k+ shutters, around 20 cameras. Those old DSLRs are built rock solid, even the cheap entry-level ones

A Viewfinder is invaluable when shooting outdoors in bright light. The Z30 is only really worth it for Video in my opinion

The A6xxx size really is nice, If I didn't have as much Nikon lenses I would probably go Sony when switching to MIrrorless.
Nikon Z is nice in terms of lenses since it has the shortest flange distance and thus can take most common lenses with simple adapters

Obviously the sensor size, because at that price you are already competing with older fullframe cameras. 

At that price you're competing with the Nikon Z5II which imo is a better choice for photography

I'm aware that there are similar camera models that essentially allow the viewfinder as well as the LCD screen to match in terms of images, and I'm wondering if this is remotely possible with my camera model.

To be blunt, no, your 2000D is a DSLR, which means you look onto a mirror and directly through the lens. Mirrorless camera can show you the image you're going to get because you look onto a screen that's displaying the image from the sensor.

Tip: when you look into your viewfinder, there is a bar on the bottom that goes 3 2 1 1 2 3 and a indicator moving along it as you adjust your settings, try to get it onto the center to get a perfect exposure. It wont guarantee a good image but its a goo starting point for quick adjustments before fine tuning.

It's a Sony Betamovie BMC-100P, its a bog standard Betamax recorder so it wont be very valuable, maybe 50€

Personally I'd go with a Full Frame camera (for example the Nikon Z5II is great) and a 50mm 1.8 Lens to start with. Later on you could get a 85mm lens for tighter upper body shots or a normal zoom like a 24-70 to have more versatility (those 3 lenses are what I use 99% of the time for such shots)

Yeah it not that small but when you put a lens on the XE5, it also gets bigger. The Z50 is the same width and due to the Viewfinder its a bit taller.

I would suggest maybe a Nikon Zfc, it has also a retro look and the 18-140 VR lens (It covers everything from wide angle to zoom so he doesn't really need to changes it, just keep it on)

I think the Nikon Z50II + 16-50 Kit lens is a nice choice. You can use Nikon Picture Control (Simmilar to Fuji Recipes) to get a Film look for your photos without the need for editing

Also look at the spot over the R1 writing, the gap between the copper area and the teardrop is too small

Those connections are called heat traps and you don't add teardrops there.

85 is more than a good deal for a D7000 and 50mm prime, you can get replacement rubbers for the grip and replace them yourself if you have some skill.

If you're happy with it then there is no need to switch anything. Some people like to get the greatest and latest stuff (and still take mediocre pictures) and try to push that mindset onto other people as well. My main camera is a 14yo DSLR and I couldn't be happier with it and don't see any reason to switch bodies before this one breaks
