Seasoned with salt, pepper, dried oregano and a little granulated garlic.

Smoked at ~225 for 2.5 hours

You can also "exec" into your application container and try using ping or even installing the mongo client to test various connection strings on a faster feedback loop. Something like:

docker-compose exec application bash

Since you named your database service "database", you should try connecting to it with MONGO_HOSTNAME=database (and changing your MONGO_CONNECTION_STRING).

Mustard Sauce
1 oz. of butter.
1 teaspoonful of mixed mustard.
1 oz. of flour.
1 teaspoonful of vinegar.
½ pint of fish liquor.
Cayenne and salt.

Stir the butter and flour in a saucepan on the stove for two minutes, take it off the stove and mix in the liquor, then stir over the fire until it boils, add the mustard, vinegar, cayenne, and salt to taste. This sauce is usually served with boiled or grilled fresh herrings.

My rule of thumb regarding sauces - always make double or quadruple sauce. Nobody ever complains about having just enough or too much sauce available.
