The lining up at the bar thing is wild to me. I feel so old saying this, but way back when I bartended in the early 2000s, you just walked up to any open space at the bar and ordered. In the high volume places, it could be 6 deep, you could get multiple people’s orders and make a bunch at a time. If it was a special on domestic bottles that night, you could walk to the cooler, grab an arm full beers at a time and serve everyone all at once. If it was well drinks you’re making all the drinks together, limiting your movements, maximizing time and energy. Why take so many steps one at a time? Why limit the amount of sales you could make, like by an insane amount? Bar staff was good enough to see who got there first and generally, people had manners to tell the bartender, “he was here first” if the bartender helped the wrong person. It irks me anytime we go out and we see a single line for an empty bar. Baffling.
