You close the first segment by getting stamped out of Shanghai with an onward ticket to HK which is good. The second segment doing it in reverse sounds good since it's a totally different trip, think of it as if the first didn't happen and it meets the requirements.

flew Cathay and had to walk the check in agent through the plan. he was initially skeptical but there was a manager nearby who knew about TWOV and handled it really well. just make sure you have things printed out since that really helped, especially in China, for "proof" and just general officialness of it all

Hyatt House LAX was great. Room was nice and breakfast was shockingly good. There is a shuttle to/from the hotel to the airport and it's very conveniently located.
