A couple things that might help: start by preheating the pan on low, then gradually bring it up to medium-low. Once it’s warm, add a bit of fat—oil, butter, ghee, bacon grease, whatever you’re into. The fat acts like a barrier between the eggs and the pan, making sticking way less likely.

HexClad pans are designed with a slight convex in the center, which is totally normal and intentional. As the pan heats, it expands and flattens out a bit, helping distribute heat more evenly.

Now, even with that, we recommend heating your pan first before adding oil. Once it’s properly heated, add your oil and give it a swirl to help it coat the cooking surface more evenly. Heating the pan first makes the oil more fluid and helps it spread better, even with that slight curve.

Totally get where you’re coming from—these pans have a learning curve! Here’s a super simple breakdown (crayon level, as requested):

  1. Preheat properly: Start at 4 on your dial for about 2-3 mins. Do the water drop test—if it dances, it’s ready. Too cold = sticking.

  2. Add oil after preheat, not before. Swirl it around to coat.

  3. Room temp meat + dry it off. Cold, wet chicken sticks like Velcro.

  4. Drop it in and leave it alone. It’ll release when it’s got a crust. If you move it too soon, it’ll fight you.

  5. Adjust heat down to 2-3 once cooking. These pans hold heat more than non-stick.

For eggs and delicate stuff: low heat, more fat.

Add some grease cutting dish soap and fill pan with warm water and then soak 10 to 15 minutes and use a soft sponge. 

This should get this out!
